Migrating to ipod

Hi all

Hope this is a good place to ask for basic ipod advice.

I've just moved to an 80Gb Ipod classic from a 20Gb Iriver IHP-120.
I've been happily using the Iriver since 2004 but 20Gb is no longer
enough.   While I like the ipod, there are a few features I've become
accustomed to which I can't find on the ipod.   I can't believe
they're not there - hence this request for help.

Here's a list of my problems:
1) I used Itunes (on XP) to manage the music but I don't like the
transfer method.   If I've created a playlist or added a couple of
tracks to my Itunes library - I want to just have that playlist or
those two tracks copied across - but it insists on synchronising.   Is
there a way around this?
2) My Irivier had a remote control - so I bought the ipod radio
remote.   Trouble is - this can only hop between tracks, not select a
different playlist or whatever.   Is there a way around this?
3) If not, my old Iriver remote had an LCD display - anybody know of
one for the ipod?
4) Is there a way to automatically add tracks to playlists when
they're added?   Here's an example.   Let's say I've ripped an
audiobook into my Itunes library and its chapters have come in as
01.mp3, 02.mp3 etc.   What I want it to be is Treasure Island Chapter
1.mp3, Treasure Island Chapter 2.mp3 and be automatically added to a
playlist called Treasure Island.   On my Iriver - this was dead simple
- create a folder called Treasure Island and drag the files into it.
Surely something like this should be just as easy even if the
filestructure is flat i.e. (as far as I know) no folders on Itunes -
just playlists.
